Summer can be the worst time of the year or the best time of the year, at least food option wise. During childhood, good quality vegetables were available only during winter. Keeping quality aside, many of the veggies like cauliflower, peas, carrots were unavailable through summer and planning meals with the limited options. (20-25 years later, today it is a different story with everything available through the year). But summer also meant the season for a host of fruits like water melons, mangoes (the king of fruits as per my Dad) and not to forget, the season for raw mangoes. Raw mangoes (Kaancha Aam in Bengali, Kairi in Marathi) are quite a delight and maybe one of the few reasons why we look forward to summer. The acidity of raw mangoes supposedly helps combat the effect of summer heat on our digestive system and thus it is recommended to include it in our diet during summer.
The cuisine of Bengal consists of dishes from both East and West Bengal i.e. undivided Bengal era as well as the dishes which originated in the city of Kolkata during the British rule. There is an emphasis on vegetarian cuisine, specially during festivals and is most commonly prepared without onion and garlic. A Mughlai influence on the cuisine is due to the their rule over certain parts of Bengal and the last Mughal emperor Wajid Ali Shah has said to have contributed a lot to the Bengali cuisine. There is an array of lesser known dishes cooked every day at home. Panch Mishali Torkari (five vegetable stir-fry), Chapor Ghonto (vegetable mishmash), Neem Begun (neem leaves stir fried with potato and brinjal), to name a few.
There is a bit of history involved with the origin of this unique blend of cuisines; The Indian form of “Hakka Cuisine” originates from the fact that the a lot of Chinese restaurants in India are owned by the people of the Hakka origin. Both the Indian and the Chinese cultures combined, accepted and fused happily in terms of food giving birth to an entirely new kind called the Indo-Chinese or the Indian Chinese; with the taste and flavors very different from both Indian and Chinese cuisine, it is a genre by itself. It is bold, varied, spicy – overall an experience by itself. The Indian Chinese flavors are also enjoyed by Indian and Chinese communities in Malaysia, and Singapore.
