Special Bengali Treat for Bengali Food Lovers in Hyderabad. Mocha'r chop or Banana blossom patties are what Bengali traditions are all about. A delicate balance of boiled banana flower with the sweetness from raisins, pungency from ginger and crunch from the deep fried outer coating. Sublime use of spices brings the whole thing together in a plate that makes you crave more. It is also served as a snack and consumed with tea.

Banana flower is a very unique vegetable, which can be cooked in many ways, like curries, koftas, cutlets and many other ways. Bengalis make different kinds of non-veg items too with this unique vegetable. Today I'm going to share a lip smacking snacks recipe which is made with banana flower. but this snack is totally veg version, as in our home onion garlic is not used in this snack, only ginger and ground whole spices are main. Inner part of the Banana flower is the key ingredient here.

Whether a mutton chop or mochar, it may be good to remember that the Anglo-Indian “chop” has been a food well loved in many other cities. Till well after Independence, into the 1950s, cutlets had been regarded as elite food, served in Railway refreshment rooms (which had the stature of upscale restaurants then) and in Lutyen’s Delhi’s posh restaurants such as the United Coffee House, set up in the 1940s by Punjabi immigrant families, catering to the British but later to Indians, post Partition.

Then, more Punjabi tastes took over and samosas, tandoori chicken and chole bhature became the food of the new moneyed elite in Delhi. Though, United Coffee House continues to serve these.

The cuisine of Bengal consists of dishes from both East and West Bengal i.e. undivided Bengal era as well as the dishes which originated in the city of Kolkata during the British rule. There is an emphasis on vegetarian cuisine, specially during festivals and is most commonly prepared without onion and garlic. A Mughlai influence on the cuisine is due to the their rule over certain parts of Bengal and the last Mughal emperor Wajid Ali Shah has said to have contributed a lot to the Bengali cuisine.
