Singara was all that a Bengali could ask for when it rains ludicrously for all day long. Singara and a cup of chai...perhaps someone has never wanted anything so badly!! Kolkata Singara is not that hard to make, however, there are some common pitfalls. You need to ensure that you have the right “moyen” which is the amount of oil in your dough. This will decide how crisp your Kolkata singara will be. Too much oil results in brittleness. The local stores use dalda and other stuff to make over-crispy samosas, so that they can sell it through out the whole day. It’s not healthy and we will refrain from that.
Kolkata singara is little different than samosa, mainly because of the stuffing and also the shape. Singara making has basically three steps. Firstly you need to make the dough. Second step is to prepare the stuffing and final step is stuff-fold & fry. In short the whole thing is little time taking. But it definitely worth :)
These "Singara" is specially made in Winter, as Cauliflower is the popular vegetable of this season. "Aloo Singara" is made with stir fried cauliflower & potatoes along with some Bengal spices. It goes well with a cup of ginger tea.
