The đal course is usually the most substantial course, especially in West Bengal. It is eaten with a generous portion of rice and a number of accompaniments. Common accompaniments to đal are aaloo bhaate (potatoes mashed with rice), and bhaja (stir fried). Bhaja literally means 'fried'; most vegetables are good candidates but begun (aubergines), kumro (pumpkins), or alu (potatoes) like French fries, or shredded and fried, uchhepotol pointed gourd are common. Machh bhaja (fried fish) is also common, especially rui (rohu) and ilish (hilsa) fishes. Bhaja is sometimes coated in a beshon (chickpea flour) and posto (poppyseed) batter. A close cousin of bhaja is bôra or deep-fried savoury balls usually made from poshto (poppyseed) paste or coconut mince.

Jhuri aloo bhaja is crispy fried potato julienne or chips that are quite popular in Bengali cuisine. It can be served with almost any dal,curry and rice. Actually,it’s a very easy recipe and need not much effort.The main trick to get the crispier Bhaja is to wash them a couple of times under running water to remove all of the starch.

At any form at any time of the day we would love to have them. No jokes.. Seriously! Ask any bong around you if you don’t believe me. But amongst all variety of potato items what we love most? Our unforgettable Alu bhate (smashed potato with onion, fresh chilli and mustard oil) and jhiri jhiri alu bhaja (thinly sliced/grated fried potato).

But due to the lengthy process and tricky procedure of chopping and dicing this typical jhiri jhiri alu bhajais now stuck to only occasional meals And ofcourse we get to see them during Durga puja or on Noboborsho’s (Bengali New Year) lunch on our platters only.

The cuisine of Bengal consists of dishes from both East and West Bengal i.e. undivided Bengal era as well as the dishes which originated in the city of Kolkata during the British rule. There is an emphasis on vegetarian cuisine, specially during festivals and is most commonly prepared without onion and garlic. A Mughlai influence on the cuisine is due to the their rule over certain parts of Bengal and the last Mughal emperor Wajid Ali Shah has said to have contributed a lot to the Bengali cuisine.
