The kati roll was invented in the first half of the 20th century in the city of Kolkata, India, and its origins can actually be traced back to a single restaurant, known as Nizam’s. At the time of the kati roll’s conception, Kolkata was the capital of the British Empire. The story goes that British patrons did not want to eat kebabs with their hands, so someone at Nizam’s decided to roll the meat up in a paratha–a crispy, buttery unleavened flatbread–and then serve it in a paper wrapper.

The long period of Muslim rule in the country has greatly influenced the architecture and cuisine of the country and Bengal was no exception. The Nawabs who represent the Mughal empire brought bawarchis and maslachis with them and soon the royal kitchens wafting with the flavour of kebabs and biryanis and when the last nawab of Awadh Wajid Ali Shah exiled to Calcutta (metiabruz), it formally established the mughlai cuisine in Calcutta which attains some robust flavour after mingling with the Bengali foods. Like biryanis and kebabsrezala too slowly cooked over charcoal fire or in sigri and thus attained an unmatched flavour, truly reflecting the Mughal legacy.

The cuisine of Bengal consists of dishes from both East and West Bengal i.e. undivided Bengal era as well as the dishes which originated in the city of Kolkata during the British rule. There is an emphasis on vegetarian cuisine, specially during festivals and is most commonly prepared without onion and garlic. A Mughlai influence on the cuisine is due to the their rule over certain parts of Bengal and the last Mughal emperor Wajid Ali Shah has said to have contributed a lot to the Bengali cuisine. There is an array of lesser known dishes cooked every day at home. Panch Mishali Torkari (five vegetable stir-fry), Chapor Ghonto (vegetable mishmash), Neem Begun (neem leaves stir fried with potato and brinjal), to name a few.

There is a bit of history involved with the origin of this unique blend of cuisines; The Indian form of “Hakka Cuisine” originates from the fact that the a lot of Chinese restaurants in India are owned by the people of the Hakka origin. Both the Indian and the Chinese cultures combined, accepted and fused happily in terms of food giving birth to an entirely new kind called the Indo-Chinese or the Indian Chinese; with the taste and flavors very different from both Indian and Chinese cuisine, it is a genre by itself. It is bold, varied, spicy – overall an experience by itself. The Indian Chinese flavors are also enjoyed by Indian and Chinese communities in Malaysia, and Singapore.

Beats my expectation

It was always difficult to get good Kolkata rolls in Hyderabad due to limited availability and sometimes out of my reach. I am ordering food from the website for quite sometime and when they launched the Kolkata Rolls, I couldn't resist but order some for my family. We were having zero expectation though had trust on their food which I have tried many times. Thankfully, I will definitely consider them as an option next time I crave for Rolls and Mughlai. They need to work a little more on packaging but that can be ignored considering the taste. Big Thumbs Up for Calcutta Bitez.
