Bengali Rice Pudding | চালের পায়েস

Payesh is a Bengali version of kheer. Rice and milk pudding flavored with cardamom, dry fruits and a sprinkle of rose water. The most loved dessert recipes in Bengal, Payesh is here to claim the domination. Payesh is just like kheer, which is made with love using simmering milk mixed rice, sugar and a pinch of cardamom powder with a resplendent garnish of chopped pistachios, cashew nuts, and almonds. There is something about the authentic Bengali cuisine we cannot stop loving. Predominantly, Payesh is made with special rice called Gobindobhog rice, which has a special aroma in itself which makes it taste even more delicious and sweet.

Any Bengali ceremony is incomplete without payesh. From offerings to Gods and goddesses to birthday parties and even a baby’s first rice eating ceremony, payesh has always found a place in the Bengali cuisine history. It is difficult to trace back the history of payesh. But it is believed that payesh was first prepared in Jagannath Puri temple of Orissa some 2000 years back. Some food historians believe that payesh probably originated in Persia. The cuisine of Bengal consists of dishes from both East and West Bengal i.e. undivided Bengal era as well as the dishes which originated in the city of Kolkata during the British rule. There is a bit of history involved with the origin of this unique blend of cuisines; The Indian form of “Hakka Cuisine” originates from the fact that the a lot of Chinese restaurants in India are owned by the people of the Hakka origin. Both the Indian and the Chinese cultures combined, accepted and fused happily in terms of food giving birth to an entirely new kind called the Indo-Chinese or the Indian Chinese; with the taste and flavors very different from both Indian and Chinese cuisine, it is a genre by itself. It is bold, varied, spicy – overall an experience by itself. The Indian Chinese flavors are also enjoyed by Indian and Chinese communities in Malaysia, and Singapore.
