Cabbage Mishmash Curry | বাঁধাকপির ঘন্ট
Bandhakopir Ghonto is a simple yet flavourful stir fry dish from the Bengali Cuisine. Cabbage is a power house of so many nutrients. It is rich in Vitamin E that gives a glowing skin and healthy hair when consumed regularly. It is also high in Vitamin K that helps in improved brain function and protects one from nerve damage. It is anti inflammatory and helps build a strong immune system to fight illness. So, it is most ideal to include this humble vegetable in our daily diet. You can make this stir fry within minutes and it is a great accompaniment to rice or roti
Ghonto is a dish of cultivated plants such as potatoes and eggplant mixed with uncultivated shak. It cannot be made up of cultivated or uncultivated plants alone as it is by definition the mixing of unrelated plants or unrelated parts of plants in the medium of water. The use of spices in Ghonto is minimal, focusing instead on using water to extract and make available nutritional and medicinal properties. The mixing of unrelated items is needed to manage tastes in the dish as many valuable plants or parts of plants are very bitter or tasteless when cooked alone. Ghonto is consequently a kind of cooking method used for plants that are otherwise not so edible but can add to the culinary repetoire.
The cuisine of Bengal consists of dishes from both East and West Bengal i.e. undivided Bengal era as well as the dishes which originated in the city of Kolkata during the British rule. There is an emphasis on vegetarian cuisine, specially during festivals and is most commonly prepared without onion and garlic. A Mughlai influence on the cuisine is due to the their rule over certain parts of Bengal and the last Mughal emperor Wajid Ali Shah has said to have contributed a lot to the Bengali cuisine.
There is a bit of history involved with the origin of this unique blend of cuisines; The Indian form of “Hakka Cuisine” originates from the fact that the a lot of Chinese restaurants in India are owned by the people of the Hakka origin. Both the Indian and the Chinese cultures combined, accepted and fused happily in terms of food giving birth to an entirely new kind called the Indo-Chinese or the Indian Chinese; with the taste and flavors very different from both Indian and Chinese cuisine, it is a genre by itself. It is bold, varied, spicy – overall an experience by itself. The Indian Chinese flavors are also enjoyed by Indian and Chinese communities in Malaysia, and Singapore.
