Rezala is a traditional Bangladeshi dish highly-influenced by Royal Mughlai cuisine. The dish most probably was invented in Bangladesh by chefs who came along with the exiled Nawab of Lucknow (home to the most legendary Indian recipes, at least according to TFD!) after the partition of the subcontinent, when East Bengal was a part of newly-founded Pakistan (West Bengal), then known as East Pakistan.
Unlike other Bengali delicacies which has traveled to far away land, rezala remain confined to the geographical boundaries of Kolkata. The reasons are not known, may be it did not get a loyal patronage or it fails to amuse the rich and varied taste of Indian cuisine. The latter being highly untrue as the mystery slowly unfolds when one get absorbed in its creamy taste and rich flavour which itself speaks about the many tales that shrouded this amusing dish called rezala.
The long period of Muslim rule in the country has greatly influenced the architecture and cuisine of the country and Bengal was no exception. The Nawabs who represent the Mughal empire brought bawarchis and maslachis with them and soon the royal kitchens wafting with the flavour of kebabs and biryanis and when the last nawab of Awadh Wajid Ali Shah exiled to Calcutta (metiabruz), it formally established the mughlai cuisine in Calcutta which attains some robust flavour after mingling with the Bengali foods. Like biryanis and kebabs, rezala too slowly cooked over charcoal fire or in sigri and thus attained an unmatched flavour, truly reflecting the Mughal legacy.
The cuisine of Bengal consists of dishes from both East and West Bengal i.e. undivided Bengal era as well as the dishes which originated in the city of Kolkata during the British rule. There is an emphasis on vegetarian cuisine, specially during festivals and is most commonly prepared without onion and garlic. A Mughlai influence on the cuisine is due to the their rule over certain parts of Bengal and the last Mughal emperor Wajid Ali Shah has said to have contributed a lot to the Bengali cuisine. There is an array of lesser known dishes cooked every day at home. Panch Mishali Torkari (five vegetable stir-fry), Chapor Ghonto (vegetable mishmash), Neem Begun (neem leaves stir fried with potato and brinjal), to name a few.
There is a bit of history involved with the origin of this unique blend of cuisines; The Indian form of “Hakka Cuisine” originates from the fact that the a lot of Chinese restaurants in India are owned by the people of the Hakka origin. Both the Indian and the Chinese cultures combined, accepted and fused happily in terms of food giving birth to an entirely new kind called the Indo-Chinese or the Indian Chinese; with the taste and flavors very different from both Indian and Chinese cuisine, it is a genre by itself. It is bold, varied, spicy – overall an experience by itself. The Indian Chinese flavors are also enjoyed by Indian and Chinese communities in Malaysia, and Singapore.
